Is it okay have stained trim in this room and white trim in the next?

Are there rules about switching from stained to painted woodwork, windows, etc.?

    I say yes it is ok--as long as you remain consistent in the trim profile. if there isn't any consistency in at least *one* element of the detail, the eye gets confused.

    I would say its more of a "balance" thing than a rule. Often times we mix stained wood along with paint. In areas like larger doorways and wood beams, its nice to break up the white paint. Much like mixing woods in cabinetry..... we mix stained woods and paint frequently. But again, in a "balance" thing. Too little and its out of place, too much and it can be overwhelming.
