    Although I am not aware that this is a Craft Art wood countertop, the species appears to be Hard Maple (NOT Soft Maple, Soft is darker in color) and it's in Edge Grain Construction. It looks like it has a non-permanent finish like Mineral Oil or another "butcher block" oil.

    For comparison here is a photo Craft Art Hard Maple wood countertop in Edge Grain construction (this particular one is on the Rachael Ray Show set).

    The most important thing to understand about a wood countertop or butcher block is the finish. Wood is not inherantly waterproof (neither is granite!) so you need to be sure you either use a waterproof finish like Waterlox or a non-waterproof finish that you understand will need to be re-oiled regularly. Waterlox is considered a permanent finish but in high use areas we recommend re-applying a fresh topcoat every 3 to 5 years.

    Different finishes may also slightly change the look or color of the wood. Get a sample of the exact wood with the exact finish before you purchase.

    It could also be White Oak in Edge Grain construction so here is a photo of that. Again, the best thing to do is look at samples in person first!

    What is Edge Grain? Look at this diagram - it's just how the wood is cut. Edge Grain has the look of thin strips.
